Chili Paste Recipe for everyone


This is the best Chili paste ever! I love making this as a condiment, This recipe doesn’t require much oil, and it’s not too spicy. It has the perfect balance of everything. 

Chili paste is a handy basic to have in your refrigerator. It is a condiment made from fresh, dried or roasted red chilies, dried small shrimp and blended with oil. The paste may simply be seasoned with salt, or flavored with garlic, onion, or spices. It is used in Sri Lankan, Chinese, Indian and Mexican dishes.  

Making them from scratch has its wonderful qualities, you have control over the quality and also the spice level by picking the best. In this post, I have shared my go-to recipe with you. You have the power to control the taste based on your preference. I hope you enjoy making this recipe.

Ingredients

  • 1/2 Cup Chili flakes

  • 1 1/2 Cups dried shrimp

  • 1 1/2 Large Onion

  • 3 Cloves of Garlic

  • Sugar 2-3 Tablespoons Depending on your preference

  • Salt

  • Oil for frying

Instructions

  • Heat few tablespoons of oil to fry the onion

  • Chop onion into small pieces & fry until light golden brown

  • Meanwhile, add the washed dried baby shrimp into fried onion

  • Let the shrimp fry. Add more oil if needed

  • Note: Be cautious as shrimp can burn real quick. When the shrimp is fried well, it will look brown color, it will be crunchy as well

  • Once everything is fried well, take the mixture out of the pan, drain the excess oil if any

  • Add the mixture to a grinder and grind into a paste leaving few pieces to have a crunchy bite

  • Heat 2 tablespoons of oil again and add finely chopped garlic

  • Let it fry, Before turning it golden brown add the chili flakes

  • Mix everything for 30 seconds, heat should be on low at all times ( it’s very easy to burn the chili so keep an eye on it all times)

  • Add more oil if needed

  • Add the onion & shrimp paste into the garlic & chili mixture

  • Fry everything together while continuously mixing

  • Add salt & sugar at the end and mix

  • Taste before taking out of the heat. Adjust the salt & sugar level depending on the taste

  • Finally, transfer the mixture into a bowl

  • You can store this in a refrigerator or an airtight container for days!
