Fish Bun | How to make the perfect & easy Sri Lankan Maalu Pan

The fish bun is one of the most famous dishes we see in Sri Lanka. It has a wonderful soft bun, inside filled with Tuna, chicken filling, or caramelized onion. I love to make this filling spicy but if are not unto the challenge, you can make it mild flavor. We eat this delicious treat as a tea time snack.

Step by step guideline 

Stir together warm water, yeast, and sugar in a bowl until the yeast has dissolved. Let it stand until it gets foamy, about 5 minutes, 

In a different bowl, beat the egg. Add flour into the bowl + yeast mix + Salt + Milk Powder + Butter

Mix everything using beater or hand, this is the consistency we are looking for

Transfer to a lightly floured surface, knead using your hand

This is how it looks after kneading, transfer to an oiled bowl

Cover and let it rest for 2 hours

Meanwhile, make the filling, this is a tuna filling

This is how it looks after adding mashed potatoes

Dough after 2 hours

Punch down dough ( deflate it) using fingertips, this should be done in a lightly floured surface 

Roll out to a long cylinder shape

Cut into 8 equal parts

Flatten each part into a round shape. 

Place the filling in the middle. I have linked my filling recipes at the end of the page

To get the triangle shape, fold from three corners, or fold from four corners to form a square shape bun 

Let it sit in the counter until you notice shape changes & bun started fluffing, it will take only 5- 10 minutes

Apply egg wash while waiting 

Preheat the oven to 375 °f, Bake for 20 minutes, if you want extra glossiness on top, apply butter

Fish Bun

Ingredients

  • 2 Cups All-purpose flour

  • 2 Tsp Yeast

  • 1 Tbsp Butter

  • 1 Egg extra egg for egg wash

  • 1/2 Cup Water 1/4 for yeast & 1/4 for the dough 

  • 2 TSP Sugar

  • Pinch Salt

  • 2 Tsp Milk Powder Optional

Instructions

  • First, let's make the yeast mixture, stir together warm water, yeast, and sugar in a bowl until the yeast has dissolved. Let it stand until it gets foamy, about 5 minutes

  • In a different bowl, beat the egg. Add flour into the bowl + yeast mix + Salt + Milk Powder + Butter. 

  • Combine everything

  • At this point knead the dough using a mixer. Mix with paddle attachment at low speed until it forms a dough. I've used a food processor to knead. You can also use the heel of your palm ( stretch & fold method) to knead the dough.

  • Transfer the dough to a lightly oiled bowl and then turn to coat everywhere. Cover tightly with a plastic wrap and let rise in a warm place until doubled in size, for about 2 hours

  • Punch down dough ( deflate it), then roll out to a long cylinder shape, this should be done in a lightly floured surface 

  • Cut into 8 equal parts

  • Flatten each part into a round shape. 

  • Fill inside with the filling ( I have used a traditional Tuna filling, you can use caramelized onion filling, I have linked my filling recipes at the end of the page) 

  • To get the shape, fold from three sides to form a triangle shape, or fold from four corners to form a square shape bun 

  • Let it sit in the counter until you notice shape changes & bun started fluffing, it will take only 5- 10 minutes

  • Beat one more egg & apply on each bun ( egg wash) 

  • Preheat the oven to 375 °f

  • Bake for 20 minutes, if you want extra glossiness on top, apply butter
