According to the well known Health-line website; Kale Is Among The Most Nutrient-Dense Foods on The planet, Loaded With Powerful Antioxidants, Excellent Source of Vitamin C, Help Lower Cholesterol, Best Sources of Vitamin K and list goes on.
Let’s find an interesting way to make kale without destroying the nutrients.
Back in the day, the only way I made kale was sautéing them. But lately figured out this super cool way to make kale. My Sri Lankan friends know about “ kola malum” which is a side dish we eat with rice.
In Sri Lanka, we have certain greens that can be made as “ Mallum”. So this is my adaptation of malum using Kale
Here I have separated the leaves from the stem
Now let’s cut these cuties into very small pieces like how you would chop cilantro
Put the greens into a saucepan
Add all the spices mentioned in the ingredients list and mix everything
Now I have added shredded coconut ( i have used frozen shredded coconut mixture or use freshly grated coconut depending on availability)
Now add coconut oil or olive oil and sauté for 30 seconds to a minute. When it’s done it will start to reduce in size
Take off the heat and add a few drops of lemon and serve 😍
Ingredients
1 Bunch Kale ( 5 Stalks)
1/2 Cup Grated Coconut
1/4 Cup Chopped Onion (Optional)
Few Chopped Cherry Tomato (Optional)
1 tsp Tumeric
1 tsp Salt
1/2 tsp Pepper
1 tsp Chili Flakes
1/4 Wedge Lime
1 tsp Dried Maldives Fish ( Optional)
Instructions
First, separate all the leaves from the stem. Use your hands to pull the leaves from their stems.
Now let’s cut these cuties into very small pieces like how you would chop cilantro.
Put all chopped kale into a saucepan.
Add all the spices mentioned in the ingredients list and mix everything.
At this point, I still haven't switched on the stovetop. Add shredded coconut (I have used frozen shredded coconut or you can also use freshly grated coconut depending on availability).
Now switched on the stove, add coconut oil or olive oil and sauté for 30 seconds to a minute and that's all, you are done. ( Tip: When it’s done it will start to reduce in size).
Take off from the heat and add a few drops of lemon and serve.
Viola!! You have a healthy and tasty kale dish. Enjoy!
