Pattis | Crispy flaky Sri Lankan Street Food

Pattis is a Sri Lankan street food. It has a flaky exterior and yummy chicken, Tuna, or Veggie Filling inside. This recipe will show you my tricks on how to make Pattis
With Sri Lanka’s long history as a land of spices, it seems only natural that the local food even the cheaper food sold on the street corners uses local ingredients and traditional cooking styles into tasty, thrilling dishes.
Every street corner there is a wide variety of short eats available for travelers to buy for a cheaper price. In this recipe, I will show you how to make one of these yummy street foods. Pattis is one of the most common and famous Sri Lankan foods ever.
This recipe I have developed by myself. The flakiness of the outer layer is to die for. Filling inside made with a verity of spices brings back memories of my childhood.

Ingredients
2 Cups All-purpose Flour
1/2 cup Cold Butter
10 tbsp Cold Water
1 Tsp Salt
1 Can of Tuna or Chicken
2 Carrots
2 Boiled Potatoes Optional
One Jalapeño
Garlic 2 cloves
1/2 cup Onion
Spices: Chili Powder Chili Flakes, Cumin, Salt, Pepper & Turmeric
Instructions
For the Filing – Heat a few tablespoons of Oil, Sautée Garlic and Onion. Into that add Jalapeño
Once everything is fried well and tender, add Shredded Carrots
Let Carrots tender, Mix in Salt, Pepper, Chili Powder, Chili Flakes, Cumin Powder, and Turmeric
Once everything is mixed well, add the boiled potatoes. Mashed the potatoes and add to the mix, Combine well ( this is an additional step)
Add Tuna Or Boiled/ Grilled Chicken into the mixture at the end and mix everything
Let it cook for a few minutes. Taste little of the mixture to make sure it’s season well
How to Make the Dough – In a bowl, add flour, Add Salt
Take the butter Right away out of the fridge and cut into small cubes. Incorporate into the flour
Now mix everything, I have used a fork to crumble butter and mix in with the flour. Refer to the video for more clarification. All the butter pieces should be incorporated with the flour
I have tried mixing with a food processor, It makes everything so much easier
Now add little water at a time and make the dough ball, the mixture should form into a ball and it should not be sticky
Divide the ball into two and cover with plastic wrap
Keep in the fridge for 40 minutes
Take one dough out of the fridge, flatten the dough using a roller
Cut rounds, Place the prepared filling inside and fold onto half
Seal the edges, use a fork to press the edges and also to get the shape
Deep Fry both sides until golden color. Flip every few minutes
Let all the oil drain, Store these in an airtight container in the fridge for days ( Although I doubt it will last much longer as everyone loves these so much!)
