Seeni Sambol | How to make Caramelized onion filling

This is a Sri Lankan style Caramelized onion recipe, It’s sweet, spicy, and delicious. Give this recipe a try and let us know how it turns out. Hope you enjoy it!
3 Onions ( Thinly Sliced)
1/4 tsp Turmeric
1 1/2 tbsp Chili Flakes
Few Curry Leaves
Few pods of Cardamom
3 Tsp Sugar
Oil for frying
First, heat a pan and add oil.
Into that add Cinnamon, Cardamom, and Curry Leaves. Let it fry
It’s time to add sliced onion
Keep the Heat on Low, Mix everything
Once the onion is getting tender, add Turmeric.
At this point, I increased the heat to medium
After a few minutes, it will reduce in size, then add Chili flakes
Reduce the heat again to low. If not, the onion will get burnt
I added a little bit of oil into the mixture at this point if necessary
Once you see the color change in Onion, Add Salt to taste
I have added Sugar at last before few minutes before taking the pan from the heat.
Take the pan from Heat when the Color becomes closer to brown color
Serve as a side or filling inside a bun.
