Simple Vegan Chilli


The Best Chili Recipe is one that is loaded with veggies and beans and full of flavor… just like this one! This easy chili recipe cooks on the stovetop and is perfect served alongside Cornbread. Add in your favorite toppings and enjoy.


Ingredient


1 Cup Pinto Bean ( Soaked overnight and boiled or Can Beans)

1 Cup Chopped Carrot

1 Cup Chopped Celery

1 Cup Sliced Mushroom

1/4 Cup Onion


Herbs

Rosemary & thyme

1 Jalapeno


Spices

1-2 Tsp Smoked Paprika

Salt & Pepper

Chilli Powder

1/4 Tsp Turmeric

1 Tsp Curry Powder

1/4 Tsp Cumin


2 Vegan Sausage

1/2 Cup Vegetable broth

1/2 Cup Water

1 cup Tomato Sauce

4 Tsp Maple Syrup



How to Make


Add a few tbsp of vegetable broth

Add in onion

Add Carrot, celery and saute in medium heat

Let it cook for 2 minutes or until celery pieces will become tender to touch and translucent

Now it's time to add in mushroom

Let it cook for a few minutes

Add in vegan sausages

Mix in all the spices

Cook the mixture until reduced in size

Now it's time to add the tomato sauce and vegetable broth and water.

At the same time add in the bean

Heat should be on low

Cover and cook for 15-20 minutes until the sauce becomes thick.

It could take more or less time, the goal is to get your desired thickness

At last add in maple syrup and mix in everything.

Note:

If you use can beans, wash them and drain the water before adding

For fresh beans, soak them

If you prefer, add beer instead of water
