Turmeric Coconut Rice

This recipe was inspired by Sri Lankan Yellow Rice. It's a beautiful marriage between Yellow Rice and Fried rice. This is a quick, easy, and super delicious. It's a vegan, well balanced healthy recipe. Turmeric coconut rice has become the go-to weekday lunch recipe in my house as it's the best tasting, quickest & healthiest recipe ever!


This turmeric coconut rice is full of aromatic flavors and makes an elegant dish! Coconut milk in the recipe adds so much creamy rich flavor to the rice. and the best part is you can cook this in a rice cooker.



Ingredients


  • 1 1/2 Cups White Rice (Basmati) 

  • 1 1/2 Cups Vegetable Broth/ Stock 

  • 1/2 to 1 Cup Chopped and Cubed Carrots

  • 1/2 Cup Sliced Green Beans 

  • 1/4 Cup Chopped Onion

  • 1/2 Green Chili

  • 3 Tsp Coconut Oil

  • 1/4 cup Coconut milk

  • 1 Tsp Salt

  • 1 Tsp Turmeric 


Spices for Aroma

  • 1-2 Star Anise

  • Few Cardomom Pods

  • 2 Stick of Cinnamon

  • Few Cloves

Equipment- Rice Cooker 

Few Tips Before we begin


Coconut Milk- It should be thick, if the milk is liquidy, keep in the refrigerator until it's thick. 

Amount of broth or water to use- It depends on the type of rice you use. Use the normal amount of water/broth you use to cook white rice

Broth - You can use Vegetable or Chicken broth for this recipe. Or simply replace it with water. 

You can create broth at home by boiling vegetable or chicken in water, use the water as the broth. 


Using brown rice- I recommend using brown rice as it's better for your health. The water amount will depend on the rice.  

I use equal parts of water/broth and rice. Add little extra turmeric to get the perfect color for brown rice. 



How to make


  • Switch on the rice cooker. I use the white rice option in the rice cooker to cook everything. Add coconut oil into the rice cooker. Once it's heating up, add the onion. Once it's frying up, add carrots & Green beans. Cook for about 3-5 minutes or until tender.

Note: Use a wooden spoon at all times when cooking in the rice cooker. 

  • Switch off the rice cooker.

  • Now add rice, vegetable broth. 

  • Add coconut milk and the rest of the ingredients.

  • Switch the rice cooker back on and press the white rice button and cook the rice as you would normally do. 

  • Let the rice cooker do its job. 

  • Once it's done, open the lid, remove the cinnamon, cardamom, and star anise from the rice, it will be on the top once the rice is done cooking

  • Slowly fold the rice using the back of a spoon, stir 

  • Serve.
