Vegan Mac & "Cheese" with Cashew Cheese


Vegan mac and cheese is essentially the same thing as regular mac and cheese, but instead of cheese, I made Cashew and Squash sauce with nutritional yeast. That being said, it tastes like macaroni and cheese in my husband's options, it's way better than regular Mac & Cheese. The creamy, dreamy texture of this vegan cheese is so amazing. I know you are going to love it. 

Ingredients


4 Cup Elbow Macaroni ( 1 Packet)

Water for boiling Pasta

1/2 Cup Plant-Based Milk

1 Clove of Garlic

2 Cups Cashew 

2 Cups Squash, cut into small pieces and boiled

2 Tbsp of lime juice

1/2 CUp Nutritional Yeast

Salt & Pepper

Pinch of Cayenne pepper


How to Make 

  1. Bring a pot of water to a boil for the pasta. Add the pasta and cook according to the package instructions

  2. Meanwhile heat a pan, Roast Cashew nuts in medium heat until light golden color.

  3. Add it to a high-speed food processor and process until cashew breaks into small pieces

  4. Into the same mixture add boiled squash, all the spices, nutritional yeast, lime juice, garlic clove, and milk. Blend on high speed until creamy. 

  5. Now you will have thick creamy aromatic cheese sauce

  6. Once the pasta is done cooking, drain the water and transfer the pasta back to the pot. 

  7. Toss in with the creamy cashew cheese. Cook for about 2-3 minutes.

  8. Taste it, add more spices depending on your preference.
